Tea is used in many foods, especially in Asia. In Japan, it is not unusual to see green tea ice cream. While in Taiwan, I was fortunate enough to dine in a tea house where they took the used oolong leaves after I had made my tea and cooked them into a pouch of cookie dough similar to a less flaky shortbread, and they were wonderful (and soft enough to chew without much effort). There are many creative uses for tea in foods, and we hope to devote an entire section to this topic in due time.
